Removing Burn Marks & Water Marks From Tables

Burn marks:

Grind egg shells with pestal/Morter and mix them with real mayonnaise to make a paste.

Using your finger work it into the burn mark.

Let sit for 10 min.  Work in some more and wipe off.

Water marks:

Basically the same idea but use cigar or cigarette ashes with mayo.  Dip a damp cloth in the mixture and work into the stain.  May take several applications.

I have also heard of using 1/2 and 1/2 toothpaste and baking soda but have not tried it.

Preventing water marks:

Put a good coat of butchers wax on the table using very fine steel wool and let it sit and dry.  Buff off with soft cloths.  Several applications build up a protective layer.  I can put a sweating beer on my coffee table and leave it for hours with no damage.

Filing For Medicaid

This can surely be a nightmare

I have been going thru this for a year

I suggest you hire an Eldercare company or Elder Attorney (if you can afford it)

It all depends on your loved one’s assets

Every state is different.  In the state of NJ Medicaid looks back 5 years at all bank records and assets.

If you have given anything away of substantial value within those years it must be put back to qualify for Medicaid

For instance if you are filing for one of your parents and within the time frame (for the state they live in) you parents gave you, a sibling, grandchild, or anyone else money to help buy a car, house, etc.  The person receiving that gift has to give back the money.

Can you imagine if your parents gave you $50,000.  or $100,000. (for example) to help you buy a house and you have to give that money back?

How do you do that?  Re-mortgage your home and hope you can make the payments?  If not, than how do you pay for your parents care in a nursing home if Medicaid will not qualify them?

Some people will do the smart thing when they get older and put their assets in their children’s names. This is not to hide anything, it is to protect their children’s inheritance.

But if something happens within the 5 years (or whatever that time frame is for their state) than it looks like they were trying to hide assets.  How are the elderly supposed to protect their assets in order to leave them to their children or grandchildren?

How does a person know that they are going to have a stroke or other issue and end up needing Medicaid?  You don’t say to yourself “I better do this now because one never knows”.  At least, most people don’t.

It is just awful…….  the system has so many flaws…….  Our government does not take care of the elderly like they should.

Sit down and discuss this with your family members so hopefully you can get things in order before something happens.

Otherwise, you end up losing everything because it all has to be sold and put toward the patients care in a nursing home or Medicaid gives nothing for that persons care.  At least until that persons assets are all spent down and nothing is left.

This is a serious concern that most people don’t know about until they find themselves having to file for Medicaid.

Check the laws in your state.  If one parent is still living in the house than it is exempt as to the patient’s (other parent’s) assets.  This was the case with us.  My mom had a severe stroke and went to a nursing home.  But than unfortunately my father was diagnosed with cancer and passed in 6 weeks so the home then became my mother’s asset and had to be sold and all the money goes to Medicaid.

I pray none of you have to go thru what our family has been thru.


Corn Casserole

This is a great easy recipe and always a big hit.

1 box Jiffy corn muffin mix

8 oz sour cream

1  16oz can corn (do not drain)

1  16oz can cream corn

1  (or 1/2) stick “melted” butter

Mix all ingredients together in a casserole dish (ungreased) blending well

Bake at 325 for 45 minutes and test with a knife to be sure it comes out clean

You can double the recipe and cook for 1  1/4 to 1  1/2 hours but keep an eye on it.


Sauteed onions and peppers (chopped small)

Well cooked crumbled bacon

Bacon Crunchies

This is a wonderful starter to a dinner party or cocktail party.

Easy to make and they freeze great.

Bacon Crunchies

Double or triple the batch

¾ c dark brown sugar

1 stick margarine (room temp)

1 package onion soup mix

1 lb bacon

Pepperidge farm white bread (thin one)

Remove crust and cut into 1/4s

Mix the first 3 ingred. till well blended

Spread mixture on 1/4s about 1 tspn per ¼ (don’t put on too much)

Wrap each one in a piece of bacon overlapping and lay on cookie sheet cut side down (cut bacon strips into thirds – one piece for each 1/4 pc of bread)

Bake 325 deg. 10-15 min.

Make in advance without baking and freeze on cookie sheet than transfer to zip lock for future  baking

Spread mixture thin and always cut bread in 1/4s first.



Creamed Spinach

This is a great recipe:

4 slices bacon

1/4 cup chopped onion

2 chopped cloves garlic

3 tbsp butter

3 tbsp flour

1 1/4 cups 1/2 and 1/2

1  16 oz bag of fresh spinach (boiled in water, drained and set aside)

1/2 tsp salt

1/4 tsp nutmeg

1/4 tsp pepper

Fresh Parm cheese.

Cook bacon in skillet and remove and set aside.  Add onion and garlic and saute in bacon grease.

add butter and flour and cook for 2 minutes till flour is cooked

add 1/2 and 1/2 and simmer for 2 min or until thickened.

Add cooked spinach and remaining ingred. (s, p,nutmeg)

Stir well, top with grated parm cheese and serve.


Home Made Croutons

Never throw away old stale bread.  Even garlic bread that the family did not finish.

Just store it in the fridge till you have enough on hand.

Cut into pieces and place in an iron skillet

Pour on lots of olive oil and toss well (the more the better).

Sprinkle with seasoning (I use a combo of garlic powder, paprika, celery salt, etc.) – whatever you want – and/or parm. cheese.  (I have even made them with curry powder)  Be creative.

Bake till good and crisp in a 400 degree oven.  (set your timer as they are easy to burn)

Serve in soups, salads, etc.

Wonderful Clam Chowder

Shrimp Bisque

Shrimp Bisque

Another great dish for this time of year.

3 tbsps butter or margarine.
1 onion, finely chopped
1 red pepper roasted in oven, black skin and seeds removed (mash pepper)
2. sticks celery, finely chopped
1 clove garlic, minced
Pinch dry mustard and cayenne pepper
2 tsps paprika
3 tbsps flour
4 cups fish stock
1 sprig thyme and bay leaf
80z raw, peeled shrimp (that have been floured, sauted in butter or olive oil and set aside)
Salt and pepper
Snipped chives

1 cup heavy cream or 1/2 and 1/2 (optional)

1. Melt the butter or margarine and add the onion,
celery and garlic. Cook gently to soften.  Blend in the roasted red pepper

2. Stir in the mustard, cayenne, paprika and flour. Cook
about 3 minutes over gentle heat, stirring occasionally.

3. Pour on the stock (recipee  below) gradually, stirring until well blended
Add the thyme and bay leaf and bring to the boil. Reduce
the heat and simmer about 5 minutes or until thickened
stirring occasionally.

4. Stir in heavy cream (or 1/2 and 1/2) for a richer soup and simmer till hot

5. Add the cooked shrimp and season with salt and pepper to taste and top
snipped chives before serving.

Note:  This soup can be frozen but not once the heavy cream is added.  So divvy up what you want for the freezer before adding the cream.


Shrimp shells (whenever you cook with shrimp save the raw shells in a ziplock and freeze them to save for this recipee)

Saute shrimp shells in butter until they turn pink.  Add water and simmer to make shrimp stock (just like making chicken stock from the carcass of an oven stuffer roaster).  Let cool and blend stock and shells in a blender.  Strain stock discarding shells and make the above bisque (or freeze stock for future use)

This recipee can also be made with lobster stock.  Next time you make a big lobster dinner save the shells and simmer them on the stove for a wonderful lobster stock.

This bisque is wonderful served with croutons right on top. (see my other blog for great homemade croutons)

And of course great crusty bread and salad


Wonderful Clam Chowder

This is the time of year for this dish.  Serve with crusty bread and a great salad for a hearty meal. (I can’t take credit for this original recipe but I have add libbed)

2 1bs clams (1 1b shelled or canned clams) .
3 0z rindless bacon, diced
2 medium onions or scallions, finely diced
1 tbsp flour
6 medium potatoes, peeled and cubed
Salt and pepper
4cups milk
1 cup light cream
Chopped parsley (optional)

1. Scrub the clams well and place them in a basin of cold
water with a handful of flour to soak for 30 minutes. Drain
the clams and place them in a deep saucepan with about
1/2 cup cold water. Cover and bring to the boil, stirring occasionally
until all the shells open. Discard any shells that do
not open. Strain the clam liquid and reserve it and set the
clams aside to cool.

2. Place the diced bacon in a large, deep saucepan and
cook slowly until the fat is rendered. Turn up the heat and
brown the bacon. Remove it to paper towel to drain.

3. Add the onion to the bacon fat in the pan and cook
slowly to soften. Stir in the flour and add the potatoes, salt and pepper,
milk and reserved clam juice.

4. Cover and bring to the boil and cook for about 10
minutes, or until the potatoes are nearly tender. Remove
the clams from their shells and chop them if large. Add
the soup along with the cream and diced bacon. Cook
further 10 minutes, or until the potatoes and clams are tender
tender. Add the chopped parsley, if desired, and serve

Add extra cream or potatoes or even corn for a heartier meal.


Hearty Chicken Soup/Stew


1 small onion diced

3 stalks celery diced

3 cloves garlic

2 carrots shredded

1 pound cubed boneless chicken breast

5 cups chicken broth

1-16 oz pg mini potato gnocchi

1-6 oz baby spinach leaves

4 Tbsp cold water
mixed with 2 Tbsp corn starch till smooth

2 cups half and half cream

salt and ground black pepper to taste


Heat olive oil in dutch oven over medium heat.

Flour cubed chicken and brown (remove from pan)

Cook, onion, celery, garlic and carrots until translucent,
approx 5 minutes or so

Add ½ cup of white wine or sherry reduce by half

Stir in cooked chicken and chicken broth, bring to a simmer

Stir gnocchi into the soup
and cook until they begin to float, 3-4 minutes.

Stir in spinach, cook until wilted, about 3 additional

Whisk cornstarch into cold water until smooth. Stir mixture and half and half into simmering

Cook until soup thickens slightly, about 5 minutes.

Season to taste with salt and black pepper.

Serve with hot crusty bread and a great salad.
