Homemade Short Bread

This was something I made for my Dad for every holiday.  God love him and God rest is soul.

1 cup butter softened

3/4 cups sifted confectioners sugar

1/2 tspn vanilla extract (you can use maple instead)

2 cups flour

1 cup hazelnuts ground

1  1/2 tspn grated orange peal

I have done this recipe without the orange peal and hazlenut and it is still great.

Cream softened butter and add sugar, slowly add flour, add other ingredients until a good workable dough forms.

Spread out on greased cookie sheet evenly.

This is the hard part.  I use a greased rubber or plastic spatula.  Use spray pam to help.

Bake at 325 degrees for 25-30 min or until slightly brown.

Remove from oven and when cool cut in squares and serve.

You will love, love this.

Stores well for a long time in tuperware or cookie tin.



Why Should I Cerf My Entire Litter Of Pups?

The reason for cerfing your litter is to determine if there are any issues you need to know about for the pups you have produced that are going to their new homes;   and for your future breeding program.

I had a litter cerfed by a board certified (ACVO) canine ophthalmologist (which I do with every litter) where one pup was diagnosed with Incipient Posterior Cortical Cataracts.

This is a condition seen often in King Charles Spaniels and I was advised by my canine Ophthalmologist that it usually goes away in 4 weeks and the dog will never have any eye issues for life.

However this vet/Optho advised me not to breed a pup from this litter or to ever repeat the breeding, which I have not and will not.

The pup was checked 4 weeks later and passed the cerf.  Otherwise I would have paid for the surgery if needed.

That is the right thing to do as a reputable breeder.

There are dogs out there with issues that some breeders feel are a “non issue” and, therefore, keep breeding those lines.

I choose not to do that.

My reputation as a breeder is only as good as the pups I produce.  And, therefore, I choose to spend the extra money to cerf my litters before they go to their forever homes.

Pups should not be cerfed prior to 8 weeks of age.  If you check with your local Optho vets they often offer certain days of the week that are a “clinic” price.

Take the time and money to do this please.  It is for the sake of your pups first and foremost, not to mention your reputation as a reputable breeder.



How To Deal With A Stroke

My mother had a severe stroke in June of 2011 and it was devastating to her and my entire family.  Especially my father.

The initial shock of seeing your loved one in the hospital is awful.  But you need to try and stay calm for the stroke victim and re-assure them that they will be okay.

My mom went into a rehab and started to regain her speech shortly after.  She started rehab and I was there every day to watch, learn and work with the physical therapists in her therapy.  I am a personal trainer so this came easier to me than most.

Her right side was affected but her right leg has come along. The first day I saw her stand and walk, with much help, I was in tears.

Unfortunately her right arm is not coming along as hoped and its been 2 years.

I truly believe in prayer and had a huge prayer chain going for mom from day one.  I believe the progress she has made is my encouraging her, along with her physical therapists and the prayers for her.

Never give up on a stroke victim.  It can take time but they can make progress.

I had mom home to my house for mothers day this year and she stood from her wheel chair, using a cane, and walked up the 2 steps into my house, with someone on either side of her for support if needed.  It was wonderful!

Don’t give up, keep working, keep praying and progress can be made.

Encouraging the stroke victim to work hard in PT is important, especially if their brain as not been effected, as in my mom’s case.

I pray for anyone going thru this ordeal.  Stay strong and persevere.



Chicken Liver Pate

1 lb cleaned chicken livers

2 cloves garlic

3-4  scallions

3 oz cream cheese

4 strips bacon cooked crisp and chopped

1/4 cup good scotch

Saute chicken liver in olive oil until done and set aside.

Puree in a food processor:

garlic and scallions

Add warm cooked livers

Add cream cheese and blend all well

Add crisp bacon

Slowly add in the scotch (this is a key ingredient)

Put in serving dish and chill in fridge.

Serve on crackers or toast points.



Molasses Cake

This recipee comes from the early 1800s and was found in a great book called The Kitchen House.

1/2 cup butter

1/3 cup packed dark brown sugar

1 egg

1/2 cup milk

1 cup molasses

2 cups flour

1 teaspoon baking soda

1 teaspoon ground ginger

1 teaspoon cinnamon

2 dashes ground cloves

1/4 teaspoon salt

Oven 350 degrees (grease 8″ square pan or use a loaf pan)

Cream butter and sugar.  Beat in egg.  In a separate bowl combine milk and molasses.  In another bowl combine flour and the rest of the dry ingredients.

Add each of these alternately to the butter mixture beating well between additions.

Spoon into prepared pan and bake 45 minutes or until toothpick comes out clean.

Three months prior to a competition a

from the diet, replacing them with carbo-
hydrates and protein to reduce body fat,
easily consuming 2,500 to 3,000 calories
or more a day. This picks up the body’s
metabolic rate to incredible heights and
even with all those calories the body sheds

The same holds true for the untrained
athlete; people who want to get in shape,
lose weight, tone down and keep the
excess pounds off. The average American
consumes too mtich fat and does not exer-
cise enough. It is important for individuals
to steer clear of quick loss diets. Sensible
eating is the key. It is important to remem-
ber that the body needs a certain amount
of fat in order to function properly. Eating
4 to 5 small meals of the right foods each
day increases the body’s metabolic rate
enabling the individual to loss fat, not

Diet and exercise go hand-in-hand.

Weight loss without exercise may result in
a thinner body, but the end result is an
untoned and flabby body. The more you
eat of the proper foods, combined with
aerobic exercise anda weight training pro-
gram, the leaner you will be. Muscle is
much more metabolically active than fat.
Therefore, increasing the muscle to fat
ratio through an exercise/diet program
results in a lean, firm body.

Curried Shrimp Over Coos Coos

Wow is this a great dish!

Flour with curry powder added – quite a bit.

Flour shrimp and saute in olive oil and butter.  Set aside (substitute cut up boneless chicken or use both)

Cut up parsnips and coat in the left over flour/curry powder and saute quickly, don’t over cook.  Set aside.

In the same pan add more oil or butter as needed and saute diced onion and garlic.  Turn off pan and leave on the stove.

In the mean time cook a box of basic olive oil and garlic coos coos.

When the coos coos is done:

Put the shrimp and parsnips back in the pan with the onions and garlic and reheat.

Add a can of chopped pineapple and chicken broth.

Bring to a boil and thicken with corn starch and water.

Corn starch mixed with cold water and wisked into the dish thickens quickly.

Spoon over coos coos to serve.

On the side serve a cooked veggi like brocolli or asparagus.




Pasta With Avacado Sauce

Cook and prepare any type of past you want and set aside.

I like Penne for this dish.

1 perfectly ripe avacado (push into it with your finger and it should be semi soft but bounce right back the skin should be black)

Put into a food processor with the juice of 1/2 of a lemon

Add parmasian cheese to your taste

As it spins add olive oil to the right consistancy, almost like quacamolie, but not too thin.

In the mean time flour and brown shrimp or boneless chicken pieces in olive oil and set aside

In the same pan as the shrimp or chicken you have removed (once browned) add peas, fresh asparagus in pieces and saute with onions and garlic.

Reheat your pasta under hot running water, put your shrimp or chicken on top and top off with the avacado sauce.

Serve with warm bread and salad.




I only blog recipees I have made for myself  (I am a big time cook) and when I go “wow” that was great!   Than I blog them.

Sweet And Sour Pork Over Fried Rice

1 lb  boneless country pork ribs cut in chunks

Add ¼ tsp sugar

1 tsp soy

1 tsp salt

1 egg white

Mix well and let sit for about 45 min.

Use good starchy white rice (cooked) (I use Kukuho sushi rice) or left over cooked multi grain rice (I have combined both)

Sauté onion and garlic, add frozen peas (you can add peppers or any other veggie you like)

Throw in 2 eggs and sauté over the heat mixing well and quickly.  Add rice immediately, a small amt of soy sauce and sesame oil to taste and toss well to coat and heat through.

Put marinated pork in a zip lock bag of corn starch.  Shake well to coat meat.

Fry in olive oil at 365 degrees till brown and remove from pan.

In same pan pork was cooked in (drain oil)  put 1 cup water, ¼ tsp salt, ½ to ¾ c sugar, 1/3 apple cider vinegar, ¼ c ketchup.

Bring to boil and mix well, add fried pork and thicken with corn starch (mix cornstarch with cold water and stir into sauce for desired thickness)

Pour over a bed of the rice and enjoy.



Assisi Pain Relief For Dogs (horses, cats, humans, etc)

I have posted a lot of info in blogs about helping dogs with arthritis, hip/elbow dysplasia, etc.

I recently read about this non invasive device and have corresponded with people who have used it with success.

You can only purchase the device thru a vet or other health care professional and each one runs somewhere around $250 and is good for about 70 treatments.

Please note: it is important to let the device rest for 2 hours between treatments or you will wear out the device before it is expired.
